Roasted Hatch Chili Salsa

  • 1/2 lb fresh tomatoes, roasted
  • 1 roasted Hatch Chili
  • 2 medium garlic cloves, peeled
  • 1 medium white onion, peeled and diced
  • 2 teaspoons salt
  • 2 tablespoons freshly squeezed lime juice
  • Roast tomatoes and chilis, remove to paper bag, then peel and seed.
    Add lime juice and salt and blend 30 seconds
  • Sweat onion in olive oil
  • Place roasted tomatoes, chopped chili, cooked onion, garlic, salt and lime juice in food processor.
  • Chill to serve, recheck for salt.
