Roasted Hatch Chili Salsa

fresh tomatoes, roasted

roasted Hatch Chili

medium
garlic cloves, peeled

medium
white onion, peeled and diced

teaspoons
salt
2
tablespoons
freshly squeezed lime juice
Roast tomatoes and chilis, remove to paper bag, then peel and seed.
Add lime juice and salt and blend 30 seconds
Sweat onion in olive oil
Place roasted tomatoes, chopped chili, cooked onion, garlic, salt and lime juice in food processor.
Chill to serve, recheck for salt.
